German Pancakes with Buttermilk Syrup

Pancakes:
  • 6 eggs
  • 1 cup milk
  • 1 cup all purpose flour
  • 2 Tbsp sugar
  • 1/2 tsp salt
  • 2 Tbsp butter, melted
Syrup:
·                        1½ cups sugar
  • ¾ cup buttermilk
  • ½ cup butter
  • 2 Tbsp corn syrup
  • 1 tsp baking soda
  • 2 tsp vanilla extract
1.    Preheat your oven to 400°F
2.    In a blender, combine the eggs, milk, flour, sugar, and salt. Blend until smooth.
3.    Pour melted butter into a 9x13 or a round cake pan
4.    Pour the batter into the greased pan
5.    Bake for 20-25 minutes, or until golden
6.    While the pancake is baking, combine all ingredients for syrup, except the vanilla, in a medium saucepan.
7.    Bring to a boil and boil (while whisking) for five minutes.
8.    Remove from heat and stir in vanilla.
9.    Pour syrup over freshly baked German pancakes and enjoy. Save the rest in the fridge for another day.
