Homemade
Chicken Broth
3 lbs. chicken necks and backs
½ cup chopped onion
2 carrots
1 celery stick and leaves
1 clove garlic
6 peppercorns
1 bay leaf
½ teaspoon dried thyme
20 cups water
Place all in large kettle. Bring to boil. Simmer
slowly 4 hours. Strain. When broth is cold remove hardened fat.
