Ham Loaf


Ham Loaf  -Higginbotham

2 Tb. pineapple juice
½ cup brown sugar
Cook until sugar is dissolved. Pour into loaf pan. Set aside.
Mix:    1 ½ lbs. smoked ham, ground
            1 lb. Ground pork
            1/3 cup chopped onion
            1 cup milk
            2 eggs, beaten
            1 tsp. dry mustard
            ¾ cup crushed soda crackers
Shape into loaf and place in pan.
Bake at 350* for 1¼ hours.
Last 5 minutes, top with pineapple chunks and chopped green pepper.

Sauce to serve along side;
            2 cups sour cream
            1 Tb. grated onion
            2 Tb. fresh lemon juice
            Dash garlic powder
            ¼ tsp. Worcestershire sauce
