Apple Loaf


Apple Loaf
Moist, spicy and freezes well.

4 eggs, beaten
2 ½ cups sugar
1¼ cups canola oil
1 teaspoon vanilla
3 cups apple, peeled and shredded
3 cups flour
1½ teaspoons soda
½ teaspoon baking powder
1 teaspoon salt
2 teaspoons cinnamon
¼ teaspoon cloves
½ teaspoon nutmeg
1 cup raisins, chopped, optional
½ cup nuts, chopped
1. Combine eggs, sugar, oil and vanilla.
2. Add apples.
3. Sift dry ingredients together and add to egg mixture.
4. Fold in raisins and nuts
5. Spoon batter into 2 greased and floured loaf pans.
6. Bake at 350* for 1 hour or until done.
