Potato Leek Soup


Potato Leek Soup

Big batch. Can be halved easily.

6 slices bacon chopped and fried until crisp.
Remove bacon from pan and reserve for garnish.
Drain off most of the fat.
Sauté 6 cups chopped leeks in the remaining fat.
Add 8 cups cubed potatoes and 4 cups chicken broth or use water and 2 or 3 tablespoons Better Than Bouillon Chicken flavoring. 
Bring to boil and simmer until potatoes are tender. Mash or puree as desired. 
Add I can, (500ml) evaporated milk. Reheat and serve garnished with bacon and chopped chives.
