Easy
White Cake
2¼ cups flour
½
cup butter
4 tsp. baking powder
1 cup milk
pinch salt
4
egg whites (½ cup)
1½ cups sugar
1½
tsp. vanilla
1. All ingredients must be at room temperature.
2. Grease 8 x 12 or 10 x 10 or two 8" layer cake pans.
3. Line with waxed paper if you want to remove cakes
from pan in one piece. Set oven at 350*.
4. Sift first four ingredients together into mixing
bowl.
5. Add butter and 2/3 cup milk. Blend with electric mixer.
6. Beat 2 minutes with electric mixer at medium speed.
7. Add egg whites, remaining milk and vanilla. Blend with electric mixer.
8. Beat 2 minutes longer. Pour into prepared pan.
9. Bake 35 – 40 minutes or until top of cake springs
back when lightly touched with finger.
10. Cool on rack 5 minutes before removing from pan.
Or it will make 30 – 36 cup cakes. Bake 18 -20 minutes.
Variation: Gold Cake: Follow
basic recipe for White Cake except change baking powder to 3 tsp. and
use 5 egg
yolks (or 2 eggs) in place of all whites.
Spice Cake:
Follow basic recipe for White Cake or Gold cake, sifting ½ tsp. cloves, 1½ tsp.
nutmeg and 1½ tsp. cinnamon with dry ingredients.
