Chocolate Zucchini Cake


Chocolate Zucchini Cake  - Darcy Nielson

Cream:            ¼ cup butter
                        ½ cup canola oil
                        1¾ cups sugar
Add:                 2 eggs
                        1 tsp. vanilla
                        ½ cup sour milk (1 tsp. vinegar in ½ cup milk)
                        2½ cups flour
                        4 Tb. cocoa, sifted
                        1 tsp. baking soda
                        ½ tsp. baking powder
                        dash of salt
                        1 tsp. cinnamon
                        1 tsp. cloves
                        2 cups grated zucchini (if large, peel first)
Pour into greased  9 x 13 pan
Optional; sprinkle batter with chocolate chips.
Bake at 325*F for 40 minutes.
Makes 24 cupcakes. Bake at 325*F for 25-30 minutes.
