Pita Bread


Pita Bread – Alicia Scotter

Combine:         ½ cup very warm water
                        1 Tb. yeast
                        2 tsp. sugar
When fluffly add:        4½ cups flour
                                    1½ tsp. salt
                                    3 Tb. oil

Beat with mixer until flour is moistened. Knead until smooth. Let rise until double. 
Knead lightly to remove bubbles.
Cut dough into equal pieces depending on size of circle you want.
This recipe makes about twenty 4½" pitas. 
Roll out each piece of dough to ¼" thick. Place on ungreased baking pans.
Let rise until double.
Bake in 500* oven for 5 minutes or until slightly golden brown.
